Here are a few insights from what he learned while scaling from pop-up to 9 locations: - Hire for culture fit over restaurant experience (We'll teach you how to make hot chicken. We can't teach you to care.) - Your first job as a leader is growing other leaders (40% of our managers started as team members. Goal is 70%.) - Authenticity can't be manufactured (Big brands spend millions trying to create what startups have naturally) - Put team engagement before business health (Happy teams → happy guests → healthy business.
