I vividly recall how deeply impressed I was several years ago, as a young environmental engineer, when I observed firsthand—literally at a landfill—the vast quantities of organic waste discarded by large hotel establishments in the Heraklion region of Crete. This waste primarily comprised food remnants from breakfast buffets and other meals. Setting aside the critical ethical issue of food overconsumption and the urgent need to shift our consumption patterns, we as engineers are tasked with managing significant volumes of food waste, which nonetheless hold substantial potential for energy production. By choosing not simply to discard one ton of this waste, but directing it to specialized treatment plants, the following benefits can be realized: The production of enough biogas to power 8 to 12 homes for one day. The conservation of 15,000 to 25,000 liters of water, depending on the type of food. The generation of 400 to 600 kilograms of nutritious compost that replenishes soil nutrients. The prevention of 0.5 to 1.0 tons of CO₂ emissions by diverting waste from landfills.
