  • Swelling and browning.
  • Release of carbon dioxide.
  • Development of "coffeol," a complex mix of volatile compounds responsible for coffee's characteristic aroma.

The roasting process is crucial; it determines the flavor, aroma, and quality of the coffee. Quick cooling after roasting helps preserve these attributes.
