Of the lipid-soluble vitamins, vitamin Ahelps in forming and maintaining healthy teeth, bones, soft tissue, mucus membranes, and skin; whereas vitamin E helps the body to produce red blood cells and use vitamin K. Of the water-soluble vitamins, vitamin B1 (thiamine) helps the body cells to transform carbohydrates into energy. Working with the other B vitamins, vitamin B2 (riboflavin) is important for body growth and the production of red blood cells. Vitamin B3 (niacin) helps in maintaining a healthy skin and nerves. In larger doses, it can also have cholesterol-lowering effects. Vitamin C is an antioxidant that promotes healthy teeth and gums. It helps the body absorb iron and maintain healthy tissues, and it promotes the healing of wounds (Medlineplus Medical Encyclopedia). Avitamin deficiency can cause several health problems (Meydani et al., 1990; Shibata et al., 1992).

  94. Vitamins can be grouped into two categories: lipid-soluble vitamins (vitamins A and E) and water-soluble vitamins (vitamins B1–B3 and C). As the name implies, watersoluble vitamins dissolve easily in water and are readily excreted from the body generally. Given that they are not as readily stored, more consistent intake is important (Fukuwatari and Shibata, 2008). Correspondingly, lipid-soluble vitamins are absorbed through the intestinal tract with the help of lipids.
