At Mars, we believe everyone has the right to safe food. In September 2015, Mars opened the Mars Global Food Safety Center (GFSC), a state-of-the-art research and training facility, designed to help tackle the most significant food safety challenges facing the planet today. The first of its kind, the facility aims to harness the power of international collaboration with a network of global partners and operational insights from Mars sites around the world, to raise the bar on food safety and help ensure safe food for all. World-leading scientists conduct pre-competitive, original research at the Center using cutting edge approaches, which are shared through scientific publications and forums. The Center has set ambitious targets in three critical areas of food safety: mycotoxin risk management, microbial risk management, and food integrity (including areas such as food fraud).

I’m thrilled each year by #WorldFoodSafetyDay, which happened this year on June 7th. Many food supply chains are global ones, and I often think back to earlier days in my career with Meds & Food for Kids. I was studying and supporting food safety of peanuts and production in Haiti of ready-to-use-therapeutic-foods— the gold standard for treating acute malnutrition. The factory I worked at sourced peanuts from Haiti, the US, Brazil, and Argentina, and distributed its life saving product around the world. I had the privilege to work with farmers, factory operators, food safety managers, and a great laboratory team. These days, I support the Mars Global Food Safety Center to develop and deploy digital risk prediction tools to enable smarter raw material sourcing and better anticipate food safety risks, specifically mycotoxins, across supply chains globally. All that work stands on the shoulders of so many passionate and talented scientists, digital technologists, and raw material sourcing experts who have dedicated themselves to attenuate risks and improve food safety for many years. Advancing food safety takes a team— more and more global ones too— as well as engagement over time. Last week, I had the privilege of moderating our #WorldFoodSafetyDay webinar, an inspiring conversation with Virginia Siebenrok (World Food Programme) and Pavlos Fragkopoulos (Mars) on how science, innovation and collaboration are shaping a safer, more resilient global food system. We discussed how food safety isn’t just a technical challenge. It is a shared responsibility that underpins food security and public health, especially in the world’s most vulnerable communities. Virginia highlighted the role of predictive science in humanitarian contexts, from rapid testing and mycotoxin modeling to digital traceability and localized capacity building. Her reminder: "If it’s not safe, it’s not food." Pavlos emphasized that while we’re surrounded by data, we need science to cut through the noise, prioritize risks and transform insight into action. AI in Action: Advancing Food Integrity with AI-powered Detection Tools Following our recent spotlight on DNA in Action, we’re proud to share another example of #ScienceInAction at the Mars Global Food Safety Center in honor of World Food Safety Day. This time, the focus is on fighting food adulteration through AI-powered innovation. As global supply chains become more complex, ensuring food integrity is more essential than ever. It means making sure food is not only safe and nutritious, but also genuine and responsibly sourced. However, economically motivated adulteration (EMA), such as mixing cheaper oils into palm oil, continues to threaten product quality and consumer trust. In collaboration with University of California, Davis, we’ve developed a novel solution: A-TEEM (Absorbance–Transmittance Excitation Emission Matrix) spectroscopy combined with machine learning. This approach delivers over 98% accuracy and 100% sensitivity in detecting adulterants—quickly, reliably and accessibly. What sets this method apart? It’s user-friendly and deployable by non-experts, making it ideal for on-site or routine quality control in industrial settings. With strong potential for in-bound testing, it brings science directly into operational environments, enhancing food safety and reinforcing supply chain integrity across the industry. DNA in Action: How Whole Genome Sequencing is Transforming Food Safety Imagine a world where foodborne pathogen outbreaks are stopped before they start — that’s where food safety is heading: from reactive to predictive. This World Food Safety Day, we’re proud to share our #ScienceInAction — real-world innovations helping shape a safer food future for people and pets. At the Mars Global Food Safety Center, in collaboration with leading academic institutions like Cornell University and The University of Georgia, we’re harnessing the power of whole genome sequencing (WGS) to elevate food safety — transforming it into a root-cause science. Our recent study shows how nanopore WGS can confirm and analyze Listeria monocytogenes in a food sample in less than 24 hours — compared to more than four days with traditional methods. This matters because Listeria is a serious foodborne pathogen — and every hour saved helps reduce public health risk. WGS offers more than just speed; it provides the complete genetic blueprint of bacteria, enabling us to identify not only which pathogen is present, but also where it originated, how it’s evolving and how it may be spreading. This insight allows for faster, more targeted and more effective responses to microbial contamination — an essential capability in today’s global food supply chains. Our work supports a broader goal: shifting food safety from reactive containment to predictive prevention — using science to protect people and pets before risks escalate. Science is at the heart of food safety. It helps us understand what makes food unsafe and guides us on how to prevent foodborne illness. We’re excited to keep exploring how WGS can unlock even more proactive solutions for the future. Whole Genome Sequencing (#WGS): Think of WGS as “23andMe” for bacteria — once we find a troublemaker, we track down its genetic cousins pointing to the source hiding along the supply chain. Long-read sequencing lets us read long stretches of DNA directly, without needing to cut them into tiny pieces, modify them or add complex chemical tags like needed in older methods. That makes Whole Genome Sequencing much simpler and more mobile — it no longer needs a high-tech lab and can now fit in a suitcase, ready to go wherever it’s needed, especially in remote geographies. 🌾 2. Aflatoxin Risk Reduction in Peanuts: Even in batches that meet specs, A handful of contaminated peanuts can slip through and pose a risk for consumers. That’s why we co-develop smart sorting technologies that detect and eliminate these invisible hotspots — helping suppliers keep surprises off shelves. 🧪 3. Simplifying Fraud Detection with Compact Tech: Cocoa butter prices are at a high, and so is the temptation for fraud. We’re scaling low-cost, prep-free mass spectrometry with #AI that flags adulteration in real time — bringing lab power straight to the source. 💡 These innovations only happen when people and partnerships come together — across industries, academia, and borders. Supply Chain Navigator Program Visits Mars Global Food Safety Center Last week, our 2025 Navigator Program cohort had the opportunity to visit the Mars Global Food Safety Center in Beijing, a leading hub for innovation in food safety and supply chain collaboration. The visit kicked off with a behind-the-scenes tour of the labs, where we saw how Mars uses cutting-edge technology to tackle today’s biggest food safety challenges. We then heard from Boris Bolshchikov, Head of Food Safety Science and the Global Food Safety Center at Mars, who shared how the company combines science and global partnerships to build resilient supply chains. Lili Yu, Senior Director of Supplier Quality Management at Mars Wrigley China, walked us through how Mars empowers its suppliers through capability building and a strong quality culture. A highlight of the session was Mars’ “Four Cs” approach: Capability, Collaboration, Communication, and Culture, a great reminder of the core principles that underpin strong, sustainable supply chains. To wrap up the afternoon, David Song, Co-Chair of our MSSC Committee, reflected on the value of collaboration and continuous learning.
