Key observations :
Germany demand and trade in cardamom
• Germany is completely reliant on imports for
cardamom. In 2011, German imports amounted
to € 8.6 million, or 580 tonnes.
• Germany is the largest European importer (22%
of total imports) and 2nd largest consumer (24%).
It only consumes a small part of all imported
cardamom.
• Germany imports 77% directly from developing
countries.
• Guatemala is by far the largest supplier to
Germany
Cardamom – Buyers looking for
• Cardamom is usually exported from producing
countries as bulk and graded produce. It is mainly used
in ready-to-use mixtures by the industrial sector and by
grinders. Cardamom can also be sold ground as a
means of value addition.
• European buyers, however, often prefer whole spices
to ground cardamom because ground cardamom
deteriorates faster, is more susceptible to
spoilage/contamination, is unstable in terms of flavour
and aroma, flavour and aroma are lost faster and it is
harder for buyers to determine the quality of ground
cardamom.
Cardamom - Labelling
• Labels should be applied to the products.
• The label should include legal information such as
the name of the product, batch number, details
of the manufacturer (name and address), date of
manufacture, expiry date, weight of contents,
and any information that may be required by
your country or the importing country,
• e.g. barcode, producer and/or packer code, all
extra information that can be used to trace the
product back to its origin.
Packaging and storage
• Generally cardamom is packed in double-layered bags
(42-50 Kg). Single-ply fabric bags lined with polybags
are also increasingly used. Black polybags are used for
the better, green grades to protect them from light as
colour is important for price.
• Dried cardamom must be stored in moisture-proof
containers away from direct sunlight. For long term
bulk storage, polythene-lined gunny bags (strong sacks
made from jute fibres) inside wooden boxes are used.
The polythene bags help to preserve the green colour
of the pods.
Legal requirements
• In the US, food products are regulated by the FDA (Food and Drug
Administration). You will need to ensure that your products,
packaging, and labelling all comply with FDA regulations, and you
will need to ensure your food facilities are registered and inspected
by the FDA as well. The FDA website is www.fda.gov
• Germany follows EU legislation regarding dried spices and herbs
(including cardamom).
• German buyers however might have their own requirements that
are stricter than or additional to EU requirements.
• Therefore it is important to ask your buyers what they require.
• An important document for you as a supplier is the ESA’s Quality
Minima Document. The ESA represents approximately 85% of the
EU market. The members are advised to use the ESA QM. By
reading this document carefully you will have a good overview of
EU legal requirements.
Finding your BUYER
• Targeting your buyers In spite of the presence of large-scale
companies, Germany also has a significant number of small
and medium-sized players which work through trading
companies. These provide a good option for you to access
the market. Targeting these smaller buyers is therefore
important in order to be successful on the German market.
• The primary customer segment for cardamom in Europe is
the Asian and Arab ethnic groups in these countries. Try to
establish business relationships with these Asians in
German cities.
• Use the following company databases to find buyers:
German Spices Association, The Food World, Europages
and Organic Bio.

It only consumes a small part of all imported cardamom. • Germany imports 77% directly from developing countries. • Guatemala is by far the largest supplier to Germany
  • 17. Cardamom – Buyers looking for • Cardamom is usually exported from producing countries as bulk and graded produce. It is mainly used in ready-to-use mixtures by the industrial sector and by grinders. Cardamom can also be sold ground as a means of value addition. • European buyers, however, often prefer whole spices to ground cardamom because ground cardamom deteriorates faster, is more susceptible to spoilage/contamination, is unstable in terms of flavour and aroma, flavour and aroma are lost faster and it is harder for buyers to determine the quality of ground cardamom.
  • 18. Cardamom - Labelling • Labels should be applied to the products. • The label should include legal information such as the name of the product, batch number, details of the manufacturer (name and address), date of manufacture, expiry date, weight of contents, and any information that may be required by your country or the importing country, • e.g. barcode, producer and/or packer code, all extra information that can be used to trace the product back to its origin.
  • 19. Packaging and storage • Generally cardamom is packed in double-layered bags (42-50 Kg). Single-ply fabric bags lined with polybags are also increasingly used. Black polybags are used for the better, green grades to protect them from light as colour is important for price. • Dried cardamom must be stored in moisture-proof containers away from direct sunlight. For long term bulk storage, polythene-lined gunny bags (strong sacks made from jute fibres) inside wooden boxes are used. The polythene bags help to preserve the green colour of the pods.
  • 20. Legal requirements • In the US, food products are regulated by the FDA (Food and Drug Administration). You will need to ensure that your products, packaging, and labelling all comply with FDA regulations, and you will need to ensure your food facilities are registered and inspected by the FDA as well. The FDA website is www.fda.gov • Germany follows EU legislation regarding dried spices and herbs (including cardamom). • German buyers however might have their own requirements that are stricter than or additional to EU requirements. • Therefore it is important to ask your buyers what they require. • An important document for you as a supplier is the ESA’s Quality Minima Document. The ESA represents approximately 85% of the EU market. The members are advised to use the ESA QM. By reading this document carefully you will have a good overview of EU legal requirements.
  • 21. Finding your BUYER • Targeting your buyers In spite of the presence of large-scale companies, Germany also has a significant number of small and medium-sized players which work through trading companies. These provide a good option for you to access the market. Targeting these smaller buyers is therefore important in order to be successful on the German market. • The primary customer segment for cardamom in Europe is the Asian and Arab ethnic groups in these countries. Try to establish business relationships with these Asians in German cities. • Use the following company databases to find buyers: German Spices Association, The Food World, Europages and Organic Bio.
