Menu Engineering Tutorial, 2006
Welcome to the Menu Engineering
tutorial. This document will lead you
through the application, explaining the
various screens and how to navigate
them.
After completing the tutorial and
familiarizing yourself with the
application, take the short certification
test.

When the application
opens, click on “enable
macros”. You will see a
screen explaining the
Terms and Conditions
of Use. If you agree,
click “I Agree” and
proceed to the Read
Me First screen.
Getting Started
Menu Engineering Tutorial, 2006
Overview
The Overview gives a
brief explanation of the
tool and its use.
To move to the next input
screen, click on the Set Up
Page tab in the bottom left
corner of the screen.

Complete the Property
Information Sections
and familiarize yourself
with the General
Instructions for
Entering Data into the
tool and Printing
Results.
To move to the next
input screen, click on
the data tab in the
bottom left corner of
the screen.
Set Up Page
Menu Engineering Tutorial, 2006
Enter your Menu
Information. The
Input screen is
protected and will
only allow input in the
white boxes. Click in
the Menu Description
Column and enter the
name of the menu
item. To move to the
Category Column, use
the tab key on your
keyboard. A drop
down menu will allow
you to select the
menu category. Tab
across to Product Cost
Column and, then, tab
across again to Selling
Price and Quantity
Sold.
To move to the next
screen, click on the
graph tab in the
bottom left corner of
the screen.
Data Input

To analyze a different
menu category, select
from the drop down
menu.
Additional detail is
available in the table
below the graph.
Icons on the screen
help identify the menu
items plotted on the
graph.
Graphs
The vertical axis
represents Quantity
Sold, indicating
popularity.
The horizontal axis of
the graph represents
Profit Margin and
profitability.

To analyze results,
choose a Menu
Category from the drop
down menu
Items that are
profitable and popular
are classified as Stars.
They appear here on
the graph.
Items that are not
profitable but popular are
classified as Plowhorses.
They appear here on the
graph.
Items that are profitable
but not popular are
classified as Puzzles.
They appear here on the
graph.
Items that are not
profitable and not
popular are classified
as Dogs. They appear
here on the graph.
To move to the next
screen, click on the
summary tab in the
bottom left corner of
the screen.

The Summary Page is
divided into categories.
For example, the page
on the right shows the
Plowhorse category,
and indicates all menu
items that are classified
as Plowhorses. The
page also makes
suggestions on
possible actions, which
might be taken for
these items, that could
make the menu more
successful.
Each Category lists the
menu items from each
menu section that have
fallen into that
category.

Menu Engineering is not
an exact science.
Conducting the analysis
will give you a snap shot
of how your menu is
performing and suggest
some possible actions.
After completing this
short tutorial, open the
application and
familiarize yourself with
the worksheets. Then,
take the short certification
test.
