This document proposes developing a new way to detect the presence of the Anisakis parasite in raw fish using a paper strip test. The test would allow consumers to easily check for contamination before purchasing or consuming raw fish. It could replace expensive freezing requirements and provide access to raw fish markets. The proposal requests €250,000 total investment for research and development, patenting, and marketing to bring the product to market. It projects large sales and royalty income from licensing the patented test worldwide, improving food safety.
