The EFSA panel on biological hazards evaluated the public health risks associated with maintaining the cold chain during the storage and transport of meat from domestic ungulates. It concluded that surface temperature is a critical factor influencing bacterial growth, identifying key pathogens such as Salmonella spp., Verocytotoxigenic E. coli, Listeria monocytogenes, and Yersinia enterocolitica. The study recommends alternative chilling and transport temperature combinations that do not increase bacterial growth risks beyond current requirements.
