What is cookies
• A COOKIE is a baked or cooked food that is typically
small, flat and sweet.
• It usually contains flour, sugar and some type
of oil or fat. It may include other ingredients such
as raisins, oats, chocolate chips, nuts, etc.
• In most English-speaking countries except for the
United States and Canada, crisp cookies are
called biscuits. Chewier biscuits are sometimes
called cookies even in the United Kingdom. Some
cookies may also be named by their shape, such
as date squares or bars. The name biscuit comes
from the French word bis, which means twice
and cuit which means baked.

Mixing Methods
Cookie mixing methods are similar to cake mixing
methods. Major difference is that less liquid is
incorporated, therefore less gluten. The methods of
mixing are
a. One stage
b. Creaming
c. Sponge
Types of Cookies
• Bagged
• Dropped
• Rolled
• Moulded
• Ice Box
• Bar
• Sheet
PRECAUTIONS TO TAKE WHILE MAKING COOKIES/BISCUITS
• A major precaution to be observed while making cookie mixture
is that they should be quickly mixed and never over processed.
• For hard to handle soft doughs, roll the dough directly on to the
baking sheet. Cut into the desired shapes and remove the scraps
from around.
• If cookies should stick to the pan, put the pan back into the oven
for a few seconds. This usually loosens the cookies easily.
